Malic acid

Acidification of jams, jellies and marmalades, juices, nectars, non-alcoholic beverages, canned vegetables and fruit,as well as chips, fries, mayonnaise. Used for the production of non-alcoholic beverages based on natural fruit juices and their concentrates.
Also used in the confectionery and concentrates industry.

It is obtained by synthesis, occurs as a mixture of D and L forms.It is an acidity regulator. It is used for acidification and flavouring. More effective in acidification than citric acid.
Its sour taste goes well with the tastes of flavour compounds typical for vegetables and fruits, especially citrus.
It demonstrates a slight preservative effect resulting only from a decrease in pH.
