Sodium citrate can be obtained by reacting citric acid with sodium hydroxide, carbonate or bicarbonate. It is used in the food industry as a sequestrant and as a flavor additive to carbonated drinks (E331). In medicine Sodium citrate is used to prevent donated blood from clotting in storage. It has a protective function for the kidneys. Sodium citrate is highly hygroscopic.
