EDTA is a white crystalline powder. It acts as a very strong sequestrant. It binds polyvalent metal ions, increasing product durability. It prevents discoloration caused by iron, copper, manganese and zinc ions. It acts synergistically with antioxidants and other preservatives. EDTA restricts the growth of bacteria, especially of the kind of Pseudomonas.
