Xanthan gum
Polysaccharide of microbiological origin, hydrocolloid composed of glucose, mannose and glucuronic acid and partially esterified acetic and pyruvic acids. Xanthan gum is used as an emulsifier and thickener in cosmetics, pharmaceuticals and food. Gives the products the desired density and stability. Xanthan gum has hygroscopic properties, which means it absorbs moisture from the environment. It dissolves easily in hot and cold water, milk, sweet and salty liquids. Creates pseudo-plastic solutions (behaving like ketchup or nail polish) and swells in an aqueous medium.
