It is obtained synthetically from sorbitol obtained by hydrogenation of D(+)-glucose, which is fermented into sorbose and then chemically converted into ascorbic acid. It takes the form of colourless or yellowish crystals or fine white powder. Odourless, with sour taste. It acts as an antioxidant, acidity regulator, stabilizer.
